Aioli provençale(アイオリソース)のレシピをご紹介致します。
Aioli provençale(アイオリソース)とは、南フランスで伝統的に愛用されてきたソース。日本で言うところのマヨネーズで卵の卵黄と油を乳化させて作ります。
用意する物
卵黄 1個
ガーリック 3片
オリーブオイル 50ml~150mlぐらい
塩 少々
こしょう 少々
作り方
① 卵黄とオリーブオイルは同じ温度にしておくこと。
② ガーリックの皮を剥き、すり鉢ですりつぶし、卵黄、塩、こしょうを混ぜてさらにすりつぶす。太めの木製のすり棒またはパスチュラを使う。(棒の方が良い)
③ すり鉢ですりつぶしながら、少量ずつ断続的にプロヴァンス産オリーブオイルを加え、休まずマヨネーズ状になるまで混ぜ合わせ続ける。(2倍くらいに容量が増える)
④ マヨネーズ状になったアイオリができたら、食卓に出すまで冷蔵庫に入れておく。
⑤ アイオリを付ける食材を準備する。(たとえば下記のようなもの)
l 蒸し野菜:人参、じゃがいも、かぼちゃ、ズッキーニ、アスパラガス、カリフラワー
l 生野菜:ブロッコリー、ラディシュ
l 硬ゆで卵
l 蒸した魚介類:たら、巻貝、エスカルゴ、エビ、イカなどお好みで!
*** ガーリックの強い味が苦手な方は、ガーリックを少な目にして、洋からし(マスタード)を加えてすり鉢で混ぜ合わせるようにすると、幾分マイルドなアイオリになります***

First of all I want to say wonderful blog! I had a quick question which I'd like to ask if you do not mind. I was curious to know how you center yourself and clear your mind before writing. I have had difficulty clearing my thoughts in getting my ideas out. I do enjoy writing but it just seems like the first 10 to 15 minutes are usually lost just trying to figure out how to begin. Any ideas or hints? Thank you!
